Marisa's Tempeh Ruben...It's What's for Lunch!





Boy was I starving today when I got home from classes! Looking for something to keep me going throughout the rest of the day I wanted a nice hearty, filling meal, with protein! I know there's a debate about how much protein you need in your daily life, and the truth is, you don't need as much as you THINK you do. However, in trying to keep up with the active NYC lifestyle I live, protein is essential in my diet or I'm just not quite complete.
Thinking quick on my feet...I whipped this up in the kitchen:
1/2 package of tempeh (sliced in half to thin them)
Onions (half moons)
Mushroom (thinly sliced)
Annie's Dijon Mustard
Sauerkraut
2 Slices of Whole Wheat bread (slightly toasted)
Dont' forget to steam the tempeh a bit before, unless you like it extra crispy. I fried the tempeh in extra virgin olive oil. Then I separately sauteed the mushrooms and onions together. Put all the ingredients in your sandwich...and I think you get the rest. Feel free to add any specialities you like! I served my with a yummy butternut squash soup from last night's dinner.
And vuala! You have your complete meal. Whole grain, protein, vegetables, pickles, and even some miso (which was in the butternut squash soup).
